I had my heart set on making another batch of black bean & sweet potato chili. Everything was in the pot cooking away when this happened…

Sad, isn’t it? Go ahead and cry, heaven knows I did. And then I sucked up my big girl panties, opened a can of pumpkin puree, and stirred it in. The lack of texture was disappointing, but the flavor was there. I now feel perfectly OK with messin’ around with this recipe, and added pinto beans and used chili in adobo instead of ground chipotle chili.
I’m making myself hungry just writing about it…
