Sopa de albondigas (beef broth instead of chicken, kale instead of mustard/turnip greens)
Black bean & sweet potato chili (chipotle in adobo diced instead of the ground chipotle)

Yes, I’m quite aware that there’s no link to the albondigas soup. The recipe I used is seriously flawed, and I’m going to have to pitch the entire pot of soup. It called for the soup to be cooked, then greens stirred in at the end. While this is a normal thing (keeps the greens from being overcooked), what is NOT normal is the recipe called for a bunch of cilantro to be chopped and simmered in with the greens.
I have an entire pot of soapy soup. I had an entire pot of soapy soup – I couldn’t even toss it outside because of the onions.

I hope you’ll forgive the lack of a real cook-through and pictures. I only have my cellphone camera these days, and well… to be completely honest, the pictures were the biggest hindrance to my actually POSTING something. I’d forget to take a picture, or try to get one and get steamed (literally) – and then spend an insane amount of time editing. Blurgh.
